Red Pepper Quinoa & Whitefish

  • 1 cup quinoa
  • 1 red pepper
  • 1 carrot
  • 1 tbsp sliced almonds
  • 1/4 cup parsley
  • 1 tbsp Feta
  • 1 lemon half
  • 1 3/4 cup water
  • 1 tbsp olive oil
  • Pinch of salt
  1. Dice peppers, slice carrots and roughly chop parsley. Set aside.
  2. Add 1 tbsp of olive oil to pan. Place on Medium high heat. Season fish and add to pan. Add lemon half. Sear one side of fish, flip and lower heat.
  3. In a mixing bowl, add chopped red pepper, carrot and parsley to quinoa and add to pan with fish. Cook for an additional minute or until fish is cooked through.
  4. Plate quinoa on base of plate, place fish on top of quinoa , top with sliced almonds, crumbled feta and lemon zest. Serve.
