Cowboy Burgers with Balsamic Caramelized Onions and Swiss

  • 1 Bermuda onion
  • 2 Tablespoons Olive Oil
  • ¼ cup Balsamic Vinegar
  • 1 Ib. Ground Beef
  • 2 Tbsp Worchester sauce
  • ¼ cup chopped Jalapeno peppers
  • 1 ½ Tbsp Hot Sauce
  • 1 Tsp Ground Oregano
  • 1 cup shredded Manchego cheese
  • 6 oz sliced Swiss Cheese
  • 1 Tbsp Smoked Ancho Chili powder
  • Salt and Pepper, to taste
  • Peel and thinly slice onion. Heat a medium sauté pan, add oil. When hot add onions. Do NOT FRY, sweat onions, string until they naturally start to caramelize. Once caramelized 15-20 minutes add balsamic vinegar, stirring and continuing to cook until all vinegar is reduced. Remove and cool.
  • Place ground beef in large mixing bowl, finely chop jalapeno peppers, shred Manchego cheese, add to ground beef with hot sauce, Worchester, chili powder, oregano, salt and pepper. Thoroughly mix by hand, once mixed make into three 1/3 burgers.
  1. Cook burger on a flat top, grill or skillet, at desired doneness add 2 ounces Swiss cheese and cover. Squirt water under cover to quickly and evenly melt cheese.
  2. Add Rocket to heal of toasted bun, place cooked burger top of rocket. Add good serving of caramelized onions.
